The word yeast comes from the Sanskrit word for boiling, referencing the bubbles that occur during fermentation. Yeast has been an ingredient for baking and fermentation for more than 3000 years.
Nutritional yeast is made from a single-celled organism of fungi called Saccharomyces Cerevisiae. In a controlled environment it is cultured, left to grow, then deactivated, harvested, washed and dried. The deactivation process prevents the yeast from being used as a leavening agent.
The special Organic Nutritional Yeast that we use features large flakes which are a bit spicier and have more yeast flavor than other nutritional yeast - added flavor that offers naturally occurring vitamins, minerals, and micro-nutrients! Nutritional Yeast is also recommended for those seeking more protein in their diet.
Conventional nutritional yeast may be grown on Genetically Modified (GM) sugar beets, but this organic yeast is grown on Organic Corn and Organic Wheat. Although this product is naturally without gluten (the gluten in the wheat does not 'transfer' into the yeast), this product is not tested to be gluten-free.
These flakes are not certified non-GMO, but are processed without any GMO inputs.

ps: the yeast is heated above 118°, so isn't a truly raw ingredient, but the soaked seeds and greens are dehydrated under 118° and that's what these snacks are mainly made of ... raw nutrition abounds! :)
